Extractase IT- Tannase

Extractase IT catalyses the hydrolysis of ester and depside bonds in hydrolysable tannins or gallic acid ester, liberating glucose and gallic acid. Treatment with Extractase IT yields tea with a good cold-water solubility and color as well as improves the quality of tea in relation to reduction in tea cream formation.

Extractase KLR facilitates efficient breakdown of cell wall components within the tea leaves, such that the leaves are better oxidized during the fermentation process. SEBMash Color Plus rapidly degrades pectin substances, thus lowering the mash/juice viscosity and provides optimal clarification and filterability. The absence of anthocyanases, cellobiase and other undesirable enzymatic activities in SEBMash Color Plus increases the color of the final juice (dark-red color).
